Raw Brownie Bites

This quick and easy recipe takes about 5 minutes, from start to finish….and they are worth every second. THIS IS MY GO TO RECIPE! Now, after you hear the ingredients, please believe me…they taste like the chewyist, fudgeyist brownie you’ve ever had. This recipe has only 3 ingredients!


1 cup raw cashews (not soaked)

2 cups medjool dates (pitted)

1 tbsp raw cacao powder + more for rolling the brownies in

**This recipe always calls for a 2:1 ratio of dates to cashews, if you half the recipe, or double it, the ratio stays the same**



Grind the cashews in the food processor until they form a fine powder. Add the pitted datesĀ and cacao and process. The mixture will eventually form a ball that swirls around the food processor. That’s when you know they’re done! Roll small pieces into balls, then roll in the cacao. Freeze until cold (they taste the best that way). Store them in the freezer in a tubberware, and defrost for 5 minutes before eating.
